RAW HONEY
Raw honey has not been heated or ultra filtered, and is considered to have health benefits. It is extracted from the beehive, lightly filtered, and poured into the bottle, bypassing commercial processing methods. All honey has health benefits, but raw honey, by it's very nature, has more natural bee pollen, enzymes, and antioxidants.
Raw honey will naturally crystallize, and crystallized honey is still good. Expect it to be opaque, rather than the clear, golden state of liquid honey. It can be returned to it's natural state by placing the jar in a hot water bath. (Do not heat honey in a microwave as it heats the honey to a higher temperature that can destroy the heath benefits and flavor).
Raw honey contains 22 amino acids, 31 different minerals, and a wide range of vitamins and enzymes. It also contains antioxidants. Many studies have linked these antioxidants to a lower risk of heart disease and certain cancers
LIQUID HONEY
Our liquid honey is gently heated and filtered in order to extend it's liquid state and to retain its health benefits and pollen content. After we process honey it is kept at room temperature. Heating honey to a high temperature can destroy beneficial enzymes and can change the aroma and color. If your honey crystalizes and you don't like the texture, you can gently heat it to 95-104 degrees in a water bath to re-liquify it. It should stay liquid for a month or so, but will eventually return to a crystallized state. You should be eating three tablespoons of honey a day for optimal health. If you take it at night before bed it also helps you get a great nights sleep! Your liver converts honey directly into glycogen, which fuels your brain during sleep.
